Freekeh (wani lokacin ana rubuta shi Frikeh) ko wanda aka gasa kuma aka shafa shi don ƙirƙirar dandano. Tsohon abinci ne wanda aka samo daga abincin Levantine da Arewacin Afirka, wanda ya kasance sananne a kasashe da yawa na gabashin Bahar Rum, inda alkama ya samo asali.[1]

Ana girbe alkama yayin da hatsi yake kore kuma tsaba har yanzu suna da taushi; sannan ana tara shi kuma ya bushe. Ana kunna tarin a hankali don kawai kara da ciyawa ƙonewa. A karkashin wadannan yanayi, yawan danshi na tsaba yana hana su ƙonewa. Sa'an nan kuma an gasa alkama da aka gasa kuma an bushe shi da rana don samun dandano, dandano, da launi. Mata na jam'iyyar sai suka doke kunnuwa suka jefa su cikin iska har sai an yi musu cikakken abinci, lokacin da aka ci alkama ba tare da ƙarin shiri ba ... kunnuwan kore sun zama rabin ƙonewa ta hanyar gasa, kuma akwai kyakkyawar cakuda alkama mai madara da sabon dandano, yayin da muke cin masara. Mun yi farin ciki da ganin shirye-shiryen, da kuma yin amfani da masara, wanda aka ambata sau da yawa a cikin Tsohon Alkawari.

Abincin abinci

A Misira, ana ba da freekeh a matsayin ḥamām bi'l-ferīk (tuba da aka cika da alkama mai kore). Ana kuma shirya Freekeh a Misira tare da albasa da tumatir, kuma wani lokacin tare da kaza. Shūrbat farīk bi'l-mukh abinci ne mai cin gashin kansa da ƙwayar ƙashi daga Tunisia. Freeket lahma, abincin alkama mai laushi tare da ɗan rago da aka gasa, wake na bazara, da ƙwayoyin pine, ya fito ne daga Jordan, kuma shūrba al-farīk miya ne tare da alkama mai kore da kaza.

A Siriya, ana shirya freekeh yawanci tare da ɗan rago, albasa, man shanu, almonds, baƙar fata, cinnamon, cumin, da gishiri.[5][6]

A Tunisiya da Aljeriya, ana shirya freekeh a matsayin babban sinadarin a cikin abincin tumatir da ake kira Chorba frik kuma ana ɗaukarsa abinci na gargajiya.[7][8]

A Turkiyya, an san freekeh da firik, kuma ana samun abincin pilaf wanda ya dogara da freekeh, wanda ake kira Firik pilavı, a cikin abincin gargajiya na Kudancin Anatolian. Ana iya haɗa shi da bulgur; ana iya ƙara legumes kamar Chickpeas da ganye da kayan yaji daban-daban, kuma wani lokacin nama. A Falasdinu (yanki) , ana yin nau'ikan freekeh pilaf iri-iri tare da ɗan rago, albasa, man zaitun, ruwan inabi, busassun cherry plums, almonds, pine nuts, black pepper, cinnamon, cumin, da gishiri. Ana kuma ba da Freekeh a cikin miya tare da chickpeas da nama (naman shanu ko kaza). [9][10]

Samfuri:Nutritional value Freekeh yana da alaƙa da abubuwan gina jiki ga sauran hatsi, musamman Alkama mai ƙarfi, wanda aka samo shi, dangane da nau'in mai ƙarfi.[11] Durum sananne ne saboda babban abun ciki na furotin (20% ko fiye da Daily Value, DV), fiber na abinci,B bitamin B, da ma'adanai da yawa na abinci, musamman Manganese (143% DV) (teburin). Kafin gasa, freekeh yana da 11% ruwa, 71% carbohydrates, 2.5% mai, da 14% furotin.
