hongeo muchim () salatin sanyi ne mai ɗanɗano a cikin Abincin Koriya wanda aka yi da farko daga ɗanɗano mai ɗanɗana (hongeo) da kayan lambu daban-daban, an yi ado da sour gochujang (Koreano chili paste). Wani bambanci ne na Koriya hoe-muchim (salada kifi) kuma na musamman ne na yankin Jeolla na Koriya.

'hongeo muchim' yana da muhimmiyar matsayi a cikin abincin yankin na Lardin Jeolla, sau da yawa ana amfani da shi azaman babban abinci ko banchan mai ƙarfi. A wasu sassan yankunan Jeolla da Chungcheong, ana ba da hongeo muchim a al'ada a wasu abincin jana'izar tare da jita-jita kamar Yukgaejang; kafofin gida sun bayyana wannan al'ada kamar al'ada ne a wasu al'ummomi.[1] Masu siyarwa a kasuwannin abinci na birane galibi suna sayar da hongeo muchim, wanda ke nuna yaduwar abincin fiye da asalin yankin.

Ba kamar hongeo-hoe ba, wanda aka yanka kawai kuma aka cinye shi tare da sauces, hongeo muchim abinci ne mai gauraye inda ake jefa skate tare da sabbin sinadaran da kuma rigakafi mai rikitarwa.[2]

Abincin yana da ƙanshin ammoniya mai kama da wanda aka danganta a cikin tushe ga mahadi da aka samar a lokacin fermentation na skate; halayen wannan ƙanshin ya bambanta tsakanin masu amfani. Arodi alama ce ta tsintsiya mai yisti kuma tana shafar karɓar ta a waje da yankuna inda ake cinye ta.[3]

Wasu masu siyarwa suna amfani da ray (ganjaemi) a matsayin madadin skate don farashi ko la'akari da wadata.

Babban sinadaran Hongeo muchim sun hada da:

  • Skate (hongeo): Ana amfani da sassan kifi na kifi da ba su da kyau ko kuma ba su da ɗanɗano. Wasu sun fi son yin amfani da skate mai ƙarancin fermented, yana mai da muchim mai laushi, mafi kusanci idan aka kwatanta da Hongeo-hoe mai ƙaranci sosai.
  • Kayan kwalliya mai ɗanɗano (yangnyeomjang): Sauce wanda ya dogara da gochujang, vinegar, tafarnuwa, ginger, soya sauce, da mai ɗanɗana kamar sukari ko shinkafa syrup.
  • Sabbin kayan lambu: Yawanci sun haɗa da radish na Koriya (mu ko muchae), cucumber, da albasa, wanda ke ba da sabon bambanci.
  • Aromatics: Koriya Parsley (Minari) sanannen kayan ƙanshi ne, kuma ana amfani da Man sésame da tsaba na sesame don yin ado.

Ana yawan yin amfani da skate a cikin cakuda acidic, kamar vinegar ko makgeolli (abincin shinkafa na Koriya), wani mataki da aka bayyana a cikin tushen girke-girke kamar yadda aka yi niyya don ta'azantar da ƙwayoyin nama da ƙasusuwa.[4]

Abincin yana aiki ne a matsayin maɓallin sinadarin naengmyeon (noodles mai sanyi) a wasu yankuna. A cikin yankunan Seoul da Gyeonggi, hoe naengmyeon (raw fish cold noodles) yawanci yana nufin abincin noodle mai ɗanɗano wanda aka rufe shi da hongeo muchim. Sabanin haka, a yankunan bakin teku na Lardin Gangwon, hoe naengmyeon galibi ana rufe shi da busassun pollock (bukeo ko hwangtae) a maimakon haka.[5]
