Ras el hanout a cikin kwano

Ras el hanout ko rass el hanout (Larabci: رأس الحانوت raʾs al-ḥānūt) wata hadaddiyar kayan ƙamshi ce da ake samu a siffofi daban-daban a ƙasashen Tunisiya, Aljeriya, da Maroko.[1] Sunan yana nufin “kan shagon” a Larabci, ma’ana haɗin kayan ƙamshi mafi inganci da mai sayarwa ke da su.[2] Ana amfani da ras el hanout a cikin girke-girke masu ɗanɗano, wasu lokuta ana shafa shi a jikin nama ko kifi, ko kuma a gauraya shi da couscous ko shinkafa.Babu wani abu mai mahimmanci na kayan yaji wanda ya zama Ras el hanout. Kowane shago, kamfani, ko iyali na iya samun nasu cakuda. Haɗin yawanci ya ƙunshi fiye da kayan yaji goma sha biyu a cikin nau'o'i daban-daban. Abubuwan da aka saba amfani da su sun haɗa da cardamom, cumin, clove, cinnamon, Nutmeg, mace, allspice, ginger mai bushe, chili peppers, iri mai laushi, peppercorn, paprika mai zaki da zafi, fenugreek, da turmeric mai bushe. Wasu kayan yaji na iya zama na musamman ga yankin, kamar su tsaunuka masu tsawo, Chufa, hatsi na aljanna, Tushen orris, albasa na monk, cubebs, busassun rosebud, iri na fennel ko aniseed, galangal, dogon albasa. Ana iya gasa kayan abinci kafin a niƙa su ko a buga su a cikin turmi kuma a gauraye su. Wasu shirye-shiryen sun haɗa da gishiri ko sukari, amma wannan ba aikin da aka yarda da shi ba ne. Garlic, saffron, kwayoyi ko ganye masu bushewa gabaɗaya ba a haɗa su ba, kamar yadda yawanci ana ƙara su a cikin jita-jita ɗai-ɗai, amma wasu shirye-shiryen kasuwanci, musamman a Turai da Arewacin Amurka, na iya ƙunsar su.[3]

Wasu abubuwan da ake tsammani na aphrodisiacs, gami da sanannun haɗari "green metallic beetles", cantharides, sun bayyana a cikin yawancin tsarin Ras el hanout na Maroko, amma waɗannan suna da alama ba su da mahimmanci don dalilai na dandano.
