Seffa kalma ce ta Maghrebi don abincin semolina cuscus mai zaki tare da man shanu, cinnamon, da almonds. Abincin na iya haɗawa da nama, kuma a madadin ana yin shi da vermicelli ko shinkafa. [1][2] Ana cinye wannan abincin a ƙarshen abinci, kafin zaki. Sau da yawa ana ba da shi a bukukuwan aure na gargajiya da tarurrukan iyali.

Hakanan ana iya ba da Seffa tare da kaza (السفة بالدجاج) ko tare da 'ya'yan inabi (السفة الحلوة بالزبيب). [3]

A cewar Emily Gottreich, sigar seffa da ta haɗa da cakuda man shanu da kaza, ko wani nama, "abinci ne na Maroko" wanda aka saba samu ne kawai a gidajen musulmai saboda haramtacciyar abincin Yahudawa akan cakuda nama da madara a cikin abinci guda.

Koyaya, seffa a cikin mafi sauki, mai ɗanɗano tare da sukari da cinnamon kawai, al'ummomin Yahudawa na Maroko ne suka shirya shi a daren Mimouna. Wannan abincin kuma an san shi da Faransanci: Couscous Sucré et Sec (mai daɗi da bushe couscous). [4]
