Murtabak, or mutabbaq (Arabic: مُطَبَّق, romanized: muṭabbaq, lit. 'folded', ararar), is a Yemeni stuffed pancake or pan-fried bread commonly found in the Arabian Peninsula, the Indian subcontinent, and Southeast Asia, notably in Saudi Arabia, Yemen, Indonesia, Malaysia, Singapore, Brunei, and Southern Thailand. Depending on the location, the name and ingredients can vary significantly. The name mutabbaq means "folded" in Arabic.

Kalmar Mubaq a cikin Larabci tana nufin "manne". Wannan yana nuna cewa murtabak na iya samo asali ne daga Yemen, wanda ke da yawan jama'ar Indiya; ta hanyar 'yan kasuwa na Indiya ya bazu zuwa ƙasashensu.
Wani nau'in muttabaq ya samo asali ne daga tsohon soja na Daular Ottoman mai suna Mohammed Zalatimo a Tsohon Birnin Urushalima a 1860. Fassararsa ta kasance takarda mai laushi wanda aka ninka da farin cuku na gida; an samo sunansa ne daga aikin shimfida takalma na yufka. Ana muhawara game da ainihin asalin sana'ar kirkirar kayan zaki masu yawa, tare da wasu suna gano shi zuwa Asiya ta Tsakiya.[3][4]
'Yan kasuwar Musulmi na Tamil ne suka kawo murtabak zuwa kudu maso gabashin Asiya. "Mutabar" haɗin kalmomi ne guda biyu, "muta" (kasancewar kalmar Keralite ce don kwai, muhimmin bangare na abincin) da kuma "bar," taƙaitaccen nau'in kalmar barota, ko "bratha roti" (gurasa).
